Cantal is made exclusively from cow’s milk. This pressed, uncooked cheese can be savoured at different ages: mild (jeune), medium (entre-deux) or mature (vieux).


On a cheese platter, try Cantal with fruits such as grapes or apples. It’s also delicious with sautéed mushrooms, in a salad and of course in the famous “truffade”, a local Auvergne dish of melted cheese and potatoes.
